Pineapples are sweet tropical fruits native to the Americas.  Rich in vitamins like potassium, vitamin C, and antioxidants, they help support healthy digestion and boost the immune system.  Include pineapple in nearly any recipe to add a sweet tropical flavor!

How to peel it?

  1. You will need a heavy sharp knife.
  2. Lay the fruit on its side, cut off the top and bottom, then remove the skin by slicing it off following the pineapple’s shape. 
  3. Cut the fruit in half and then in half again to be left with four big pieces.
  4. Remove the core from the pieces.
  5. Finally, finish cutting as desired.
 

How to eat it?

This is one of the most versatile fruits – it can be eaten raw or grilled for an even richer flavor.

Pineapple coconut fizz

With a light and fresh flavor, this cocktail can be enjoyed all summer!

Ingredients: 

  • 1 cup of cubed pineapple
  • 8 oz of coconut water
  • 1/4 cup white rum (optional)
  • Pineapple leaves and wedges for garnish
 

Instructions: 

  • Process the pineapple in a blender until smooth and frothy.
  • Pour the coconut water (and optional rum) in a pitcher with the pineapple juice.
  • Serve over ice, garnishing with the leaves and wedges. 

Pineapple chicken

This chicken is tasty, full of veggies and tangy flavors!

Ingredients: 

  • 1 pound chicken thighs
  • 1 cup cut pineapple
  • 1 red bell pepper
  • 3/4 cup pineapple juice
  • 1 tsp minced ginger
  • 1 tsp minced garlic
  • 1 tbsp chopped green onion
 

Instructions: 

  • Cut the chicken and bell pepper into small pieces.
  • Sauté to a golden brown.
  • Add the ginger, garlic, and pineapple juice and cook until done.
  • Serve with rice and top with chopped green onion.
