jackfruit

The largest tree fruit in the world.  Its flesh is full of vitamin C and its seeds are a source of protein (unlike most fruits), potassium calcium, and iron.  Have fun experimenting with this giant, subtly sweet fruit!

How to cut it?

  1. It is necessary to have a surface that is easy to clean.  For an easier process, gloves are recommended, and you should oil your knife to avoid it from getting gummed.  Coconut oil works great!
  2. Cut the fruit in half lengthwise into quarters.
  3. Remove the white core of the fruit.
  4. Remove the seeds, but if you’d like to roast them, do not discard them.
  5. Remove the fruit pods by bending each piece so the fruit separates from the flesh.
  6. Finally, remove any fibrous pulp from the fruit pods.

How to eat it?

Jackfruit can be eaten basically in every way.  Raw or cooked, sweet or savory…  And you can even roast the seeds!

vegan tacos

This vegan taco recipe tastes delicious and it’s perfect for any dinner night

Ingredients

  • 1 jackfruit
  • 1 tbsp coconut oil
  • 1 small onion sliced
  • 2 minced garlic teeth
  • 1 tbsp vegan bouillon
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp tamari
  • 2 tsp maple syrup
  • 1 cup water
  • 1 chopped chipotle pepper in adobo sauce
  • Your favorite tortillas 
 

Instructions: 

  • Combine coconut oil, paprika, chili powder, tamari, and maple syrup.  Mix well, add jackfruit, and allow to marinate for 2 hours in the fridge.
  • After the jackfruit has marinated, place coconut oil in a pan on medium heat.  When hot, add onion and garlic, and mix until the onions are soft and transparent.
  • Add bouillon and chipotle peppers, and mix until everything is covered.  Add the jackfruit, mix well, and bring to a simmer for 20 minutes, covering halfway through to avoid drying the jackfruit.
  • After 20 minutes, break up the jackfruit with a fork and reduce the heat.
  • Cover and continue cooking on low for another 20 minutes making sure to break up larger pieces.  Cook until all liquid has evaporated. 
  • Add mixture to tortillas and enjoy!
 

You can use this delicious meat substitute in tacos, burgers, sliders, or in quesadillas!
