FIG

The fig is a delicious small fruit known for its sweet honeyed flavor.  It assists with digestion and helps manage sugar levels.  Its micronutrients are mainly vitamins B12 and D. 

How to peel it?

Figs are entirely edible, from the skin to the flesh, so no need to peel them – take off the stem if needed.

How to eat it?

Fig can be eaten raw, grilled, or roasted.

Fig SYRUP

Use in mixed drinks, pour on ice cream, or dress up a salad! 

Ingredients: 

  • 1 cup of water
  • 1 cup of sugar
  • 2 figs (add more for a sweeter flavor)
  • 2 sprigs of rosemary
 

Instructions: 

  • Bring the water to a boil, add the sugar, and stir until dissolved.
  • Add the figs and simmer for 15 minutes on low heat.
  • Add the rosemary and simmer for another 5 minutes.
  • Let cool and strain the liquid.
  • Store in an airtight container and keep in the fridge.

Fig goat´s cheese salad

This is a simple yet full-of-flavor salad

Ingredients

  • Olive oil
  • 1 chopped shallot
  • 1 stalk of finely sliced celery
  • A few handfuls of chopped pistachios
  • 8-12 figs
  • 1/2 pack goat cheese
  • A few chopped thyme leaves
  • Honey
  • Fresh spinach, arugula, or a mixture of greens

Instructions: 

  • Preheat oven to 350F
  • Heat olive oil in a pan, add shallot and celery, and sauteé for 4-5 minutes until they soften.
  • Add the pistachios and keep cooking for a few minutes, then set aside.
  • Trim the tops off the figs and butterfly-cut them.
  • Place the figs and some sprinkled pistachios on a sheet and bake for 5 minutes.
  • Place warm ingredients over the salad greens and add crumbles of goat cheese.
  • Serve with olive oil and honey.
